
Fruity Bliss Balls
Ingredients
- 1 cup (130g) slightly thawed frozen fruit
- 1 cup (90g) rolled oats
- ¾ cup (60g) shredded coconut
- ¼ cup (60g) coconut oil
- 2 tbls (45g) maple syrup
- 1 tbls sunflower seeds
- Extra desiccated coconut for rolling
Method
Step 1: add frozen fruit, oats, coconut and coconut oil, maple syrup and sunflower seeds to the Thermomix bowl and mix 30 sec SP6, scrape down and repeat if necessary until its smooth and well combined.
Step 2: Roll out a heaped tablespoon of mixture into wet hands and toss in desiccated coconut. Place on a lined tray or container and refrigerate until balls have set.
Store in an airtight container in the fridge for up to 1 week otherwise they freeze well up to 3 months.
