Your fussy eating child will love these healthy chicken chippies!
Protein, in particular, from an iron rich source can be difficult to get into tots. I use thigh fillets for max iron content, turmeric for anti viral properties which also gives a golden crunch to the crumb which most kids love.
Makes 30 pieces
- 3 boneless thigh fillets (fresh not thawed)
- 1 cup of plain flour
- 2 lightly beaten eggs with a dash of water
- 5 cups of panko crumbs
- 1 tsp of turmeric
With a meat mallet, flatten out each fillet between 2 pieces of cling wrap until its all of the same thickness. Add the turmeric to the crumbs and combine.
Slice the fillets along the short side, each of 1cm width.
Toss the fingers in flour, then egg, then the crumbs.
These are best shallow fried in either rice bran oil or coconut oil for added flavour.
